Overnight Oats



Happy New Year!!!


It's that time of year again...


Once all the festivities are over and we have a moment to breathe and reflect. It's a feeling of calm that transitions into a feeling of excitement, hope and motivation for a new beginning that is represented by the new year. 


So, what are you focused on bringing into your life now that the ball has dropped?


Me? As I pondered my intentions for 2018, these overall themes easily came to mind.


Decrease drama and stress. 
Simplify and find more efficiencies.


That was hard to say out loud since I'm really not generally a dramatic or anxious person. My stressors over the past year were mostly unavoidable and ultimately manageable, however they often cluttered my mind and at times made normal daily routines feel challenging.


So! I'm on a mission to streamline my day to day in order to leave some extra mental space, energy and tolerance for whatever life may present.


How? This will take some big picture planning and goal setting as well as some very small shifts in my ongoing routine. For example, I need to get back to...


1. Going to bed and get up 30 mins earlier.
2. Prepping weekday breakfast and lunches the night before
3. Carving out more time for exercise each week


These may seem like very small or obvious ideas, but I know they will make a huge difference on how I think and feel each day.


The first on the list are directly related to making my mornings more relaxed and less rushed. Sometimes getting myself ready and my daughter fed and out the door in the morning feels more like prepping for a trek across the country. A healthy energizing breakfast is a must for me, so skipping that important meal is never an option, however rushed eating prevents us from digesting and metabolizing food effectively. 


If our bags are already packed and our meals prepared ahead of time, we can enjoy breakfast together and even have a little time to relax and enjoy each other before the long day apart. This makes a huge difference in both our days.


Enter Overnight Oats. This is one of the quick make-ahead meals I'll be utilizing in 2018...


Overnight Oats 

Serves 1



  • 2/3 cup unsweetened almond or coconut milk
  • 1/4 cup steel-cut or rolled oats
  • 2 tbsp chia seeds
  • pinch sea salt
  • 1 tsp vanilla extract
  • 1 tsp organic pure maple syrup
  • 1 tbsp coconut flakes or shredded coconut
  • 1 tbsp goji berries


  1. In a small container or mason jar, pour the nut milk first, then add the other ingredients. Stir, then put the top on and shake vigorously.
  2. Place the oat mixture in the refrigerator overnight. Enjoy cold or heat up on the stove or in the microwave for one minute.
  3. Top with additional berries or chopped fruit or nuts if desired.
