Fall Recipe Roundup

As we transition into cooler weather, darker days, and the hustle and bustle of holiday season, it’s important that we fuel our bodies with nutritious meals that are warm, comforting, and filled with seasonal flavors. Comforting meals do not have to be unhealthy! I have rounded up 5 of my go-to fall recipes from various healthy living bloggers with a few pairing ideas to round out your meal.

Baked Spaghetti with Kale, Mushrooms, and Tofu Ricotta
Major yum. This recipe is carnivore approved (believe it or not!) Most people fear tofu, they feel the texture is odd and they aren’t sure what to do with it. This recipe is perfect because you won’t even know there is tofu in it, I promise! This dish gives you all the cool-weather-coziness with all the nutrition, but it’s hearty, warm, and very satisfying. A green salad with olive oil and balsamic vinegar on the side is wonderful too, but I do feel this meal stands well on it’s own. A one pan dinner!

Crockpot Maple Dijon Chicken (drumsticks or thighs)
I first made this meal last winter when Christy and her husband came over for a little dinner party. Everyone thought it was delicious! The flavors are so on point for fall and you’ll have this in your crockpot for 4 hours filling your house with delicious scents. This meal would pair nicely with roasted sweet potatoes, brussel sprouts, or sauteed green beans - whatever you like.

Lentil Loaf with a Maple Sweetened Glaze
Move over meat loaf! This loaf is loaded with veggies, protein from the lentils, whole grains from rolled oats, and healthy fats from ground walnuts. Don’t leave out the glaze on top, it’s too yummy! The list of ingredients looks long, but it’s mostly spices and I promise won’t take too much of your time. Leftovers make this a perfect weeknight meal.

Buffalo Chicken Casserole
Talk about comfort! This is a true crowd pleaser because you can never go wrong with buffalo sauce. My fiance isn’t a huge fan of spaghetti squash, but in casserole form he hardly notices it. I use grapeseed oil Veganaise, but regular mayonnaise is fine and it’s only ¼ cup in the entire recipe. I’ll be making this throughout winter for sure!

Flourless Pumpkin Chocolate Chip Bars
I can’t finish this post without naming a healthy low-sugar treat to keep those taste buds satisfied! With only 1 tablespoon of sugar in the entire recipe (minus the chocolate chips), you can feel good about sharing these with family and friends.
