Grape & Feta Spinach Salad

Summer is the season for salads. With all the hot weather, warm and heavy dishes can make you feel sluggish. The right salad will be a refreshing alternative on those sweaty days, leaving you full and energized instead of over-stuffed and sleepy.


This yummy Grape & Feta Spinach Salad is simple and easy to make, but the combination of flavors is delicious and explosive! Adding the pecans gives it a punch of protein, and the grapes are full of healing nutrients. THey contain quercetin, a natural anti-inflammatory that can protect against heart disease and they have a high potassium content, which can help lower blood pressure.


Next time you're hungry on a scorching summer afternoon, try this salad for lunch! It will leave you satisfied and smiling. Enjoy!

Ingredients:


Salad:

  • Fresh raw spinach
  • Fresh organic red grapes
  • Crumbled organic feta cheese
  • Raw pecans
  • Ripe avocado, diced (optional)

Dressing:

  • Cold pressed extra virgin olive oil
  • Balsamic vinegar
  • Fresh ground pepper

Preparation:

  1. Top spinach with grapes, feta cheese, avocado and nuts.
  2. Mix 3 parts olive oil to 1 part balsamic vinegar and add fresh ground pepper to taste.
  3. Toss salad with dressing and enjoy!
